Super Healthy Gluten Free Granola - Kid Friendly

School is in full swing and that means breakfast can be rushed and somewhat chaotic, which is why I love having easy no-prep healthy snack or breakfast options stocked up in the house.  

This Super Healthy Gluten Free Granola not only tastes delicious but makes snacking (or breakfasting on the go) healthy and no fuss.  It is a nutrient dense snack packed with lots of yummy healthy omega-3s for keeping those tired mama brains afloat. 

Making your own granola is so much less expensive than buying, not to mention you get to pick which favorite ingredients you want to add in.  

I like to put this granola a top plain full fat yogurt or in a bowl with almond milk to give it more of a cereal feel.

So what are you waiting for?  Get to the store and grab all the nuts your heart desires and get to baking!  Good luck not eating the entire bag in one day!

Ingredients:
1 cup sliced almonds
1/2 cup shredded coconut (no sugar added)
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup walnuts
1/2 cup dried raisins or cranberries (optional)
1 cup almond meal
1/2 cup flax seed
1/2 cup melted honey
1/4 cup organic coconut oil
1 tsp vanilla extract
1-2 tsp cinnamon

Preparation:

  1. Pre-heat oven to 250 degrees.
  2. Place all ingredients in a large bowl to combine.
  3. Spread on a large cookie sheet lined with parchment paper and bake for 1 hour and 15 minutes or until golden brown. Let it fully cool before breaking it up. 
  4. Store in mason jars in the pantry.
